A long time Star Wars fanboy favourite out there is the work of Adywan (aka Adrian Sayce). He's most famous for his 'A new hope' revisited edition. Which contains a ton of corrected colours, added images, and continuity corrections, along with enhancements throughout. Many of which I never even noticed until watching his cut.
You can literally see every.single.change via another fan's Picasa account. It is nothing short of phenomenal work (wait till you chceck the Cantina changes!) and we all hope Lucasfilm take the changes made in to consideration, when new versions come out, as this work only highlights how many small things were wrong with the film in the first place. (Dr.Evazans arm-how did I miss that!)

Included as an extra on his cut and not part of the film is humourous but also awesome looking Alderaan extended sequence, worth watching just for a special appearance by one character. 8D
As many of you may know his work on Empire revisited is under way and had some hiccups when a drive failed and all work was thought lost, but now back on track you can look forward to July(ish) 2011 to see that being tweaked. A sneak peak of which is below, along with a trailer we previously posted.
